Polenta
Ingredients:
- 3 cups water
- 1 tsp. salt
- 1 cup polenta
- 1 cup shredded Parmesan cheese
- Mushrooms (optional)
Directions:
- Add water to a medium pot and bring to a boil.
- Add salt, then whisk in polenta.
- Reduce heat to low and cook for about 20 minutes, stirring occasionally until liquid has been absorbed and mixture is creamy.
- While polenta is cooking, shred Parmesan cheese and chop mushrooms as desired (optional).
- Stir in 1 cup shredded Parmesan cheese and mushrooms.
- Cook for an additional 10 minutes.
- Remove from heat and let stand 1-2 miutes.
