Polenta

Ingredients:

Directions:

  1. Add water to a medium pot and bring to a boil.
  2. Add salt, then whisk in polenta.
  3. Reduce heat to low and cook for about 20 minutes, stirring occasionally until liquid has been absorbed and mixture is creamy.
  4. While polenta is cooking, shred Parmesan cheese and chop mushrooms as desired (optional).
  5. Stir in 1 cup shredded Parmesan cheese and mushrooms.
  6. Cook for an additional 10 minutes.
  7. Remove from heat and let stand 1-2 miutes.
