Date nut cake
Recipe of Genevieve (Groves) Hedden

Ingredients:
- 1½ cups all-purpose flour
- 1½ cups white sugar
- 16 ounces diced dates
- 4 cups whole pecans (about a 1 pound package)
- ½ cup (1 stick) butter (at room temperature; don't use margarine!)
- 4 large eggs
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1½ teaspoons vanilla
- angel food cake pan
- wax paper
Directions:
- Cut wax paper to fit bottom of angel food cake pan. Grease and flour paper and pan.
- In mixing bowl combine butter, sugar, salt, eggs, vanila, and ½ cup of the flour. Use electric mixer to mix thoroughly. Add baking powder and mix again.
- In separate bowl mix rest of flour with dates and pecans. Hand stir this mixture into batter.
- Place batter in angel food cake pan and allow to rest for 1 hour before baking. Bake at 350°F for 50 minutes. Reduce heat to 325°F and bake for additional 5-10 minutes or until toothpick comes out clean.
- Start making another one, because this one will disappear shortly after people taste it.
